Honey Processing

Once the coffee cherries are harvested, they undergo a unique honey processing method before being dried. This process involves leaving the sweet fruit pulp intact on the bean while it dries, which gives the coffee a distinct sweetness and fruity flavor. This method is time-consuming and requires meticulous attention to detail, but the result is a truly exceptional coffee.

Roasting

After the coffee beans are dried and hulled, they are then slow-roasted to perfection by Wanda, our female roaster. She uses a custom-made in america roasting machine that combines traditional methods with modern technology to bring out the unique flavor profile of each batch of coffee.

Sustainability

Hacienda Iluminada home of 787 Coffee also prioritizes sustainability in its farming and processing methods. The farm uses composting and other organic practices to reduce waste and maintain a healthy ecosystem. In addition, the farm provides jobs to the local community and helps to preserve the coffee-growing tradition in Maricao.
